Simple pleasures: Niall McKenna’s omelette, and pancakes with strawberries

Niall shows you how to whip up a couple of simple yet delicious dishes ideal for the school holidays

WITH the school holidays come many positives - but one negative is the dreaded “I’m hungry” from your teenage son.

Therefore, what better time to teach your teenagers how to be more self-sufficient than by learning the art and joy of cooking? This week’s two recipes are for 13 to 15-year-olds and are simple and effective when it comes to curbing hunger quickly and easily: an omelette and pancakes.

Omelette (serves one)

Ingredients
  • 2 eggs
  • 1 teaspoon of butter
  • 1 teaspoon of olive oil
  • 3 strands of fresh chives, chopped
  • Salt and pepper
Method

Firstly, break the eggs into a bowl and mix thoroughly with a whisk, seasoning with salt and ground black pepper.

Next, place the butter and oil on a medium heat in a non-stick frying pan. Once melted, pour over the egg mixture and let it cook for a few seconds. Using a wooden spoon, draw the air from the side of the pan to the centre and let any uncooked egg run to fill the spaces - repeat this several times as it will cook a thicker and lighter omelette.

If you want to add an additional ingredient, now is the time to add to the egg mixture. For this one, I have added in chopped chives and cooked for two minutes or more until it becomes slightly brown underneath and just setting on top.

To serve, slide the omelette onto a plate, fold and sprinkle with chopped chives.

Pancakes with strawberries (serves four)

Ingredients
  • 3 eggs
  • 200ml buttermilk
  • 300g flour
  • 1 tbsp baking soda
  • 1 tbsp caster sugar
  • 1 tbsp treacle
  • Zest of 1 lemon
  • Butter
  • Handful of strawberries, washed, hulled and chopped
Method

Firstly, whisk the eggs, buttermilk and treacle together in a bowl. Next, sieve the flour, baking soda and caster sugar and make a well in the centre. Add in the buttermilk, whisking to a smooth batter. Set aside for 20 minutes.

Next, rub a frying pan with butter, place on the heat and drop in a tablespoon of the mix. You can cook several at once but make sure to keep well apart from each other, as the mix spreads.

Once you start to see bubbles forming in the centre, turn over and cook for one minute on the other side. Cool on a wire rack.

Serve immediately with a garnish of chopped strawberries and Nutella, lemon and sugar, maple syrup or chocolate sauce and vanilla ice cream.
