Vegetables in disguise

Pizza base with cauliflower
Pizza base with cauliflower

Everyone knows eating fruit and vegetables is healthy, but if you have fussy eaters, sometimes stealth is best. Here we reveal sneaky ways to add veg without anyone noticing. This week: Pizza base with cauliflower

THIS recipe makes one pizza crust (serves two) and counts as two of your five-a-day per half pizza (before toppings). Using a food processor, blitz florets from one head of cauliflower to a rice-like texture. Stir around a non-stick frying pan on low heat for 10 mins until the cauliflower is dried out. Mix in a bowl with 2 eggs, 30g of Parmesan and 50g grated mozzarella. Transfer to the centre of a greased baking sheet and spread into a circle. Bake for 20 mins at 180c/160c fan/Gas Mark 4 before adding toppings.
